| Abstract: | El presente estudio tuvo como objetivo evaluar la composición fitoquímica, el contenido nutricional y las propiedades sensoriales del maíz morado (Zea mays L.), en comparación con las variedades blanca y amarilla, mediante análisis instrumentales y sensoriales. Se realizaron evaluaciones funcionales, fisicoquímicas, químico-proximales y sensoriales. |
