| Abstract: | El presente proyecto tuvo como finalidad caracterizar el perfil bioactivo del aceite esencial obtenido de la semilla de aguacate (Persea americana Mill. Cv. Hass) y evaluar su comportamiento funcional en un sistema alimentario. Este estudio se desarrolló en respuesta a la necesidad de valorizar subproductos agroindustriales y de identificar alternativas naturales que mejoren la estabilidad química y la calidad de alimentos procesados. |
